How do I have my incoming emails remain on the server so they are still accessible on my home desktop when neeed?

Set your phone to an IMAP account and your home to either IMAP or POP. POP will typically remove emails from the server by default (depending on your client), but some clients have a POP option to retain emails after retrieving from server.

delete the imap account & re-create as a pop3 account.
