The easiest way is to backup everything on your 5 to iCloud. Then, when you login to your 6s and set it up with your same iTunes login, you can "restore" your new phone from your old phone's backup.
If, for some reason, you can't backup to iCloud, you can backup to a computer. Plug your phone into your computer and sync it with iTunes, creating a backup. When you get your new phone, plug it into the same computer and set it up from the backup of your old phone.

I concur with Emmadiane. iTunes is the easiest way. If you don't have a computer with iTunes you can do backup via iCloud via the device on Wi-Fi and plugged into a charger.
Settings > iCloud > Backup - you can turn this on
