I would like to turn my phone plan into an individual plan, however my sister has lost her phone and does not want to replace it nor make anymore payments towards it. In short, I'd like to drop that line without a ton of hassle and keep my phone, how do I go about that?

You'd have to call customer care at 800 922 0204 and ask them to disconnect it. If it's under contract, you'll be charged an early termination fee based on how much of the contract was completed and whether you started it with a basic phone or a smartphone. Basic phones start at $175 and drop by $5 every month the service is paid for and smartphones start at $350 and drop by $10. When you call to disconnect, it'll stay pending until the last day of your bill cycle since Verizon Wireless has month in advance billing, you've already paid up to that day anyway. A way to get it disconnected on demand would be to first suspend it without billing and then call to disconnect. You can suspend without billing either at myverizon or through the IVR.
