My new phone is using up data too quickly and I would like to know if there are apps, etc that I can delete or turn off to minimize the data loss.

Couple of things you can do from the phone its self.
1) restrict the background data. Settings > Data usage > click the "more" in the top right > restrict background data.
2) turn off sync and notifications in some of your apps (facebook, snapchat, instagram, emails)
3) make sure you have all applications closed when you're finished using the apps.

4) set Google Play to not auto update apps or to auto update only over wi-fi
5) if connected to wi-fi for long periods of time, turn off mobile data until it's needed
