You're confusing the two. Edge is just a payment plan. Even if you have an Edge plan your mobile plan is still a More Everything plan. You're just getting a More Everything plan with an Edge payment plan vs a More Everything plan with a contract or without a contract.

Edge allows you to pay full price for a device over 24 months instead of having to come up with it all at once. In either case you'll get a $15 or $25 a month discount depending on how much data you have. If you pay full price for a device and your not on contract it's call Month2Month discount instead of Edge discount. If you get a phone on contract you do not get a discount. Edge is cheaper if you get the $25 a month discount. Of course if you can afford to pay full price upfront that would be your cheapest option on a monthly basis going forward. Obviously it ends up being the same over time. Even with the $15 discount the difference between that and a contract is not much. At least Edge gives you the option to upgrade early contract you're waiting 24 months.
