Outside the usual Verizon apps and some of the stock features that no one uses, has anyone noticed any other disabled app or process (com.) that cause the G2 to miss an OTA or cause an installation or download fail?

As long as phone is not modified and innopath app/process is not removed, any app may be disabled if possible and update will occur.

Yes not using the stock launcher. Samsung devices used to be the same way.

Using stock currently but have Google Now launcher at the ready as it is pretty minimal and fast.

I am aware but the stock launcher has to be in the front for the update. Unless that was changed recently. I know just a couple years ago both Samsung and LG needed the stock launchers to be default or it wouldn't FOTA the update.

Well, whatever the update brings, I hope it brings a fix for this ghostly single flash green LED issue.
