Can anybody tell me how I change from the default setting of two rows of App Icons down to One row on the home screen.

When you are on the home screen, press the BB menu key once.  The menu will pop up.  Go to options and you can change it there.

I've tried that and I can't find anything in the options that will let me do it. I thought it would be under screen/keyboard but its not there.

I'm looking at mine right now.  Once you're in the Homescreen Preferences page, there is a "Set Homescreen Layout" section where you can click the button and set it to one row...

When I go to options it doesn't even list home screen preferences

Make sure you are pressing the BB key next to the green phone call key on the front of the unit.  Once you push the BB key (7 dot symbol array) you then push options and you can then see "Set Homescreen Layout"  From there you can chose a one row, two row or three row layout.
