Your phone is setup as IMAP. Whatever you do on your phone affects ALL clients connected to that email. You will need to set it up as POP in order to do what you are asking.

I have no idea what IMAP or POP even means? Is there a dummy version of that somewhere or can you instruct me?

IMAP or Internet Mail Access Protocol what you do will affect everything connected to that protocol.
Gmail by default is set up as IMAP
POP - Post Office Protocol will allow you to delete your mail, but other things are not affect.
GMail can be setup this way.

Make sure you log in online first and set gmail to POP. Then follow that process on all your devices that connect to your gmail.
